Kicking off Spring with the first of seven rare barrel-aged varieties of our very own Texas sotol.
This first barrel started life at the Desert Door distillery, where it was used to age our Texas sotol. Then it headed down the road to Vista Brewing, who filled it with their Black Pilsner, which resulted in their limited Desert Skies beer release.
After Vista finished aging their beer in it, the barrel came back to Desert Door, where we refilled it with our Oak-Aged Texas Sotol. The resulting concoction yielded a very distinctive version of our spirit with notes of chocolate and espresso.
We’ll be releasing this bottle exclusively in our tasting room to go along with International Dark Skies Week. We’ve partnered with our friends at Eden West Food Truck to help kick off spring with a delicious dinner pairing.
Spinach and Spicy Field Greens | white turnips, charred green onion, fermented tomato vinaigrette, pickled gulf shrimp, sunflower sprout with roots
Pairing: A Texas Sun | Italian Prosecco with a splash of Desert Paloma
Smoked Beef Tri-Tip | “carrot mole”, pickled green coriander, mint and cilantro flowers, herbed texmati rice
Pairing: The Comanchero | Desert Door original sotol, jalapeños, cilantro, sotol juice, and lime
Pecan Honeysuckle Cake | buttercream, strawberry jam, fresh berries and edible flowers
